Homemade Creamy Coleslaw

Ingredients

  • 4 cups green and purple cabbage finely shredded
  • 2 carrots, peeled and finely shredded
  • 1 small onion finely minced

Creamy Dressing

  • 3/4 cup mayonnaise
  • 2 TBS apple cider vinegar or white distilled vinegar
  • 1 TBS white granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp celery seed

Instructions

  • Shred 4 cups of any mix of cabbage. I used 3 cups of green and 1 cup of purple cabbage. You can shred using a knife and cutting very thin strip of cabbage, or use a food processor or even a box grater. Place shredded cabbage into large bowl.
  • Shred 2 peeled carrots very fine using a box grater or a food processor. Place into large bowl with the cabbage.
  • Peel and cut onion into large pieces. Mince into tiny pieces using a box grater or food processor. Add to the cabbage and carrots into large bowl.
  • **Optional vegetables could be celery and green bell pepper. Just thinly cut each and add to the large bowl if you desire.
  • Mix all vegetables in large bowl together using tongs.

Making Coleslaw Creamy Dressing

  • In medium bowl mix well mayonnaise, apple cider vinegar, salt, pepper, sugar, and celery seed.
  • Pour dressing over cabbage mixture and mix well to combine. Cover bowl with plastic wrap and refrigerate. Enjoy.

  • This was a crazy busy week. I’ve been trying to get a new MRI and now I’m being told that I need to repeat a benign brain tumor surgery that I originally had in 2015 so I can think straight again. I’ve cleaned up my apt and been to see a few doctors who are referring me to other cities like MD Anderson in Houston or UT southwest in Dallas. Or even back to Dell Center in Austin. I’ve been trying to get insurance info & disability benefits at Social security ofc. Hopeful that I will survive this fiasco. Today I ate a cheese quesadilla for lunch with a broccoli slaw and it was awesome with yum yum sauce. Kind of a different way to do things like that but I am trying to enjoy everyday life now.

  • catherine…I watched your video & thought I had it in my head. You would never believe what I did wrong ….I mixed the jello the hot water and the cold water and mixed it in with the batter it made a very solid kind of cake I knew something was wrong when I tasted of it but it was still good. I really enjoy your recipes I guess I need to watch the video more than once

      1 (3oz) box lime jello
      2/3 cup boiling water
      2 (5oz) containers lime or key lime yogurt
      1 (8oz) container frozen cool whip, thawed (or 8 oz homemade whipped topping)
      1 (9 inch) ready crust (shortbread or graham cracker)

      Instructions
      In a large bowl place 2/3 cup of boiling water. Add in box of jello. Mix with a fork for 3 minutes until all sugars are dissolved.
      Add in both containers of lime yogurt. Whisk together until well incorporated.

      Using a spatula fold in cool whip. This will take about 5 minutes to get a smooth consistency. It should start thickening up and holding shape.

      Pour mixture into ready pie crust and smooth out. Place lid on and refrigerate for at least 2 hours to set up. Garnish with extra cool whip and grated lime. Refrigerate leftover pie.
