Crockpot Chicken Fajitas

Simple, easy, and delicious with only 5 ingredients bring this dish together. I love adding the salsa. Try to use different colored bell peppers as you can, it just brings the fajitas to life.

Crockpot Chicken Fajitas

Ingredients

  • 2 lbs boneless, skinless chicken breasts or chicken tenders
  • 8 oz jar of salsa
  • 3 TBS taco seasoning
  • 2 onions, sliced I use red & yellow
  • 4-5 bell peppers, sliced I use red, yellow, orange, and green

Garnishes

  • sour cream or crema, pico de gillo, cilantro, shredded cheese

Instructions

  • Place chicken in bottom of crockpot.
  • Slice onions and peppers and place on top of chicken.
  • Pour salsa on top of peppers and onions.
  • Sprinkle taco seasoning on top of salsa.
  • Place lid on crockpot. Cook on low for 6 hours or on high for 4 hours.
  • Take chicken out and remove chicken to a cutting board. Shred with forks or cut into pieces.
  • Place back into crockpot and mix everything together. (Add more salsa if a saucier consistency is needed.)
  • Heat tortillas. Garnish with cilantro, sour cream, pico, and shredded cheese and enjoy.
