Simple, easy, and delicious with only 5 ingredients bring this dish together. I love adding the salsa. Try to use different colored bell peppers as you can, it just brings the fajitas to life.
Crockpot Chicken Fajitas
Ingredients
- 2 lbs boneless, skinless chicken breasts or chicken tenders
- 8 oz jar of salsa
- 3 TBS taco seasoning
- 2 onions, sliced I use red & yellow
- 4-5 bell peppers, sliced I use red, yellow, orange, and green
Garnishes
- sour cream or crema, pico de gillo, cilantro, shredded cheese
Instructions
- Place chicken in bottom of crockpot.
- Slice onions and peppers and place on top of chicken.
- Pour salsa on top of peppers and onions.
- Sprinkle taco seasoning on top of salsa.
- Place lid on crockpot. Cook on low for 6 hours or on high for 4 hours.
- Take chicken out and remove chicken to a cutting board. Shred with forks or cut into pieces.
- Place back into crockpot and mix everything together. (Add more salsa if a saucier consistency is needed.)
- Heat tortillas. Garnish with cilantro, sour cream, pico, and shredded cheese and enjoy.
