Crockpot Chicken Parmesan with Pasta

Equipment

  • 6 quart crockpot

Ingredients

  • 2 lbs chicken breasts, skinless & boneless
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 TBS cooking oil
  • 48 oz jar favorite pasta sauce
  • 1 lb pasta, cooked per package instructions and drained
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, shredded
  • 1/2 cup panko crumbs (optional)

Instructions

  • Place chicken in bottom of 6 quart crockpot. Drizzle 1/2 TBS oil over chicken. Sprinkle with 1/2 of the seasonings (salt, pepper, garlic powder, and Italian seasoning). Flip chicken over and drizzle 1/2 TBS oil over chicken, and sprinkle with the rest of the 1/2 seasonings listed (salt, pepper, garlic powder and Italian seasoning).
  • Pour the pasta sauce all over the chicken.
    Place lid on crockpot and cook on high for 4 hours or on low for 6-8 hours until chicken is cooked through and fork tender.
  • During the last 20 minutes of cook time, prepare the pasta per instructions on package and drain well.
  • Remove chicken from crockpot and cut into cubes, slices, or shreds and add back to the crockpot with the cooked pasta. Mix well and flatten pasta for an even layer.
  • Leave crockpot on. Top the pasta & chicken with shredded mozzarella cheese, then parmesan cheese, panko crumbs, and sprinkle with extra Italian seasoning. Cover with lid for 5-10 minutes until cheese has melted. Enjoy.
