Crockpot Italian Beef Sandwiches

Ingredients

  • 3-4 LB chuck roast
  • 1 TBS vegetable oil
  • salt & pepper, to season roast
  • 2 cups beef broth
  • 1/4 cup worcestershire sauce
  • 1/4 cup soy sauce
  • 1 bell peppers, any color, diced
  • 1 beef bouillon or 1 tsp better than bouillon
  • 2 tsp italian seasoning
  • 1/2 jar sliced roasted red bell peppers
  • 4-6 pepperoncinis, whole or sliced
  • hoagie buns, provolone cheese, mayo

Instructions

  • In a large skillet, heat oil to a medium high heat. Season roast with salt & pepper on all sides. Place roast in hot skillet and let sit for 4-6 minutes to brown. Turn roast over and sear another 4 minutes. Rotate roast around on sides of meat to brown. Place roast in crockpot.
  • In a medium bowl mix together broth, worcestershire sauce, soy sauce, italian seasoning and extra bouillon. Pour over roast.
  • Add onion, red roasted peppers and pepperoncinis to top of roast.
  • Cover crockpot with lid. Cook on high 4-6 hours or on low 8-10 hours until it pulls apart and is very tender.
  • Toast lightly buttered hoagie buns in oven on 400 degrees until toasted about 5-7 minutes. Build your sandwich. (I like to add additional peppers and provolone cheese. Enjoy.
