Crockpot Meatball Subs

These Italian flavored meatball subs remind me of my favorite sandwich that I used to get from a favorite sandwich shop.  My dad and I would get these many years ago.  So this definitely brings me back.  I sear these meatballs first to get a layer of flavor going, then they sit in a nice tomato base in the crockpot for hours.

Crockpot Meatball Subs

Ingredients

  • 1 1/2 lb ground chuck
  • 2 eggs beaten
  • 1 1/4 cups italian flavored bread crumbs
  • 2 TBS chopped parsley
  • 3 TBS minced garlic divided
  • 1 28 oz canned crushed tomatoes
  • 3 TBS tomato paste or 7 oz tomato sauce
  • 1/4 cup minced onion or dry minced onion
  • 1/4 cup parmesan cheese grated
  • 1 tsp basil
  • 1 tsp oregano
  • salt & pepper to taste
  • mozzarella cheese shredded
  • kaiser rolls

Instructions

  • In crockpot combine crushed tomatoes, tomato paste/sauce, 2 tablespoons garlic, oregano, basil, salt & pepper.
  • In large bowl, hand mix together ground chuck, eggs, bread crumbs, parsley, onion, 1 tablespoon garlic, parmesan cheese, salt & pepper.
  • Roll meat into 1 inch balls. (should make around 28-30).
  • Heat 1 TBS oil in frying pan. Place meatballs into pan and brown on all sides. (these do not need to be cooked on the inside.)
  • Place browned meatballs into sauce in crockpot.
  • Cook on low 4-6 hours.
  • Place meatballs on rolls, sprinkle with cheese, broil for 3-5 minutes until cheese is melted.
  • Serve & Enjoy.
