Crockpot Potato & Ham Soup

Ingredients

  • 7 medium russet potatoes, peeled and diced
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium yellow onion, diced
  • 1.5 lbs lean ham steak diced
  • 2 tsp minced garlic
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 2 TBS dried parsley
  • 6 cups vegetable or chicken broth (I used vegetable "better than bullion)"
  • 1 cup heavy whipping cream
  • 2 TBS corn starch
  • 1/4 cup water or broth from crockpot
  • garnishes: cooked bacon, cheddar cheese, green onions, and sour cream

Instructions

  • Add potatoes, carrots, celery, onion, ham, salt, pepper, parsley, garlic, and broth. Stir well to combine.
  • Cover crockpot with lid and cook on low for 6-7 hours or on high for 3-4 hours until vegetables are tender.
  • Turn off crockpot and add heavy whipping cream or milk. Using a potato masher, mash the vegetables to help thicken the soup. If you want a more thicker soup, you can add a slurry of corn starch and broth from crockpot.
  • Garnish with cooked bacon, cheese, green onions, and/or sour cream.
