Crockpot Potato & Ham Soup

Ingredients
- 7 medium russet potatoes, peeled and diced
- 3 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 medium yellow onion, diced
- 1.5 lbs lean ham steak diced
- 2 tsp minced garlic
- 1 tsp salt
- 3/4 tsp black pepper
- 2 TBS dried parsley
- 6 cups vegetable or chicken broth (I used vegetable "better than bullion)"
- 1 cup heavy whipping cream
- 2 TBS corn starch
- 1/4 cup water or broth from crockpot
- garnishes: cooked bacon, cheddar cheese, green onions, and sour cream
Instructions
- Add potatoes, carrots, celery, onion, ham, salt, pepper, parsley, garlic, and broth. Stir well to combine.
- Cover crockpot with lid and cook on low for 6-7 hours or on high for 3-4 hours until vegetables are tender.
- Turn off crockpot and add heavy whipping cream or milk. Using a potato masher, mash the vegetables to help thicken the soup. If you want a more thicker soup, you can add a slurry of corn starch and broth from crockpot.
- Garnish with cooked bacon, cheese, green onions, and/or sour cream.
