Denver Omelette Egg Bites

The perfect little breakfast. High Protein & Low Carb. So tasty.

Ingredients

  • 7 large eggs
  • 1/2 cup cottage cheese (substitute heavy cream or milk)
  • 1/2 cup diced green bell pepper or any color
  • 1/2 cup diced yellow onion
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 lb diced ham (I used Frick's)
  • 2 green onions, sliced
  • 4 oz shredded cheddar cheese

Instructions

  • Preheat oven to 350 degrees. Spray a 12 cup standard muffin tin with non-stick cooking spray thoroughly.
  • In a large bowl crack 7 eggs. Add in cottage cheese and seasonings. Whisk until thoroughly mix together.
  • Spoon diced ham into bottom of the 12 prepared muffin tin cups. Spoon diced peppers and onions on top of the ham. Top with shredded cheese.
  • Spoon egg mixture into cups to fill to top line of each muffin tin cup. Top with sliced green onions on each one.
  • Bake in preheated oven for 18-22 minutes until golden brown and cooked through. Allow to rest a few minutes before removing the egg bites to a serving platter.
  • To freeze: Cool completely and place into ziploc freezer bags for up to 2 months. Remove 1-2 and microwave for 60-90 seconds until heated through to the center. Break open to heat faster.
