Easy Taco Rice

Equipment

  • Medium sauce pan

Ingredients

  • 2 TBS butter
  • 1 cup uncooked long grain white rice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cumin
  • 1/4 tsp chili powder
  • 1/4 tsp garlic powder
  • 1 (4oz) can diced green chilies
  • 10 oz corn (frozen or canned drained)
  • 2 cups chicken broth

Instructions

  • In a medium sauce pan over medium high heat melt butter.
  • Add rice and stir for 1-2 minutes stirring continuously.
  • Stir in salt, pepper, ground cumin, chili powder, garlic powder, canned diced green chilies, corn and chicken broth. Bring to a boil over high heat.
  • Reduce heat to low setting, place lid on and simmer for 15-20 minutes until rice is tender.
