In medium skillet cook up sausage, onions & bell peppers until sausage is browned and onions & peppers are softened. Drain if necessary.NOTE: you can also fry up bacon or chop up ham.
Line a large deep sheet pan with parchment paper. Place soft tortilla bowls in a single layer on prepared sheet pan. Evenly spoon cooked sausage into the tortilla bowls.
In a medium bowl whisk together eggs and all seasonings.NOTE: seasonings are a preference, so you can change these up to suit your flavor for omelets.
Using a 1/3 cup measuring spoon place egg mixture on top of the cooked sausage in the flour tortilla bowls. If you have extra egg mixture fill in where needed in the bowls.
Sprinkle cheese on top of the egg mixture in the tortilla bowls.
Preheat oven to 350 degrees. Place sheet pan with tortilla bowls into oven and bake for 10 minutes. Place foil over the tortilla bowls and bake another 10-15 minutes until eggs are set.
Remove from oven and garnish with green onions or chives. Enjoy.
