Egg Omelette Bowls

Equipment

  • medium skillet
  • spatula
  • cutting board & sharp knife
  • medium bowl
  • whisk
  • 1/3 cup measuring tool
  • large sheet pan lined with parchment paper

Ingredients

  • 6 oz Jimmy Dean uncooked regular pork sausage
  • 1/2 cup colored bell peppers, diced
  • 1/4 cup yellow onion, diced
  • 1 (8 count) pkg soft flour tortilla bowls (found in taco aisle of store)
  • 1 cup shredded cheddar cheese
  • 8 large eggs
  • sliced green onions or chives for garnish

Seasonings for eggs

  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp paprika
  • 1/8 tsp ground cumin

Instructions

  • In medium skillet cook up sausage, onions & bell peppers until sausage is browned and onions & peppers are softened. Drain if necessary.
    NOTE: you can also fry up bacon or chop up ham.
  • Line a large deep sheet pan with parchment paper. Place soft tortilla bowls in a single layer on prepared sheet pan. Evenly spoon cooked sausage into the tortilla bowls.
  • In a medium bowl whisk together eggs and all seasonings.
    NOTE: seasonings are a preference, so you can change these up to suit your flavor for omelets.
  • Using a 1/3 cup measuring spoon place egg mixture on top of the cooked sausage in the flour tortilla bowls. If you have extra egg mixture fill in where needed in the bowls.
  • Sprinkle cheese on top of the egg mixture in the tortilla bowls.
  • Preheat oven to 350 degrees. Place sheet pan with tortilla bowls into oven and bake for 10 minutes. Place foil over the tortilla bowls and bake another 10-15 minutes until eggs are set.
  • Remove from oven and garnish with green onions or chives. Enjoy.

    • Yes, these can be frozen, just wrap individually and place in a freezer Ziplock bag.To reheat in unwrap and place in microwave for 45 seconds at 70% power, then add time if needed.
