Egg Roll Soup

Craving egg rolls produced this amazing soup using flavors & colors found in egg rolls blended in this soup.  Always simple, easy, and delicious.

Egg Roll Soup

Ingredients

  • 2 carrots shredded
  • 3 garlic cloves minced
  • 1/2 green cabbage shredded
  • 1 Onion diced
  • 2 tsp ginger minced
  • 2 TBS olive oil
  • 1 tsp toasted sesame oil
  • 1 lb ground pork
  • 6 cups chicken stock
  • Salt & Pepper to taste

Instructions

  • Prepare cabbage, carrots, ginger, and onions.
  • In large stock pot, heat up olive oil on medium high heat.
  • Brown up the ground pork and place on a plate and set aside.
  • In same pot add cabbage, carrots, ginger and onions. saute for 5 minutes, stirring occasionally.
  • Add pork back to pot.
  • Add salt & pepper to taste.
  • Add chicken stock and bring to a boil stirring occasionally.
  • Cover for 15 minutes on low and let simmer.
  • Stir in sesame oil until combined.
  • Taste, add seasoning.
  • Serve and Enjoy.
