Halibut Foil Packets on Grill

Wow, these so turned out delicious on the grill.  We put zucchini, peppers and red onions in these foil packets and topped with fresh dill and parsley.  Don’t forget the lemon.  Oh my. Deliciousness my family loved.

Halibut Foil Packets on Grill

Ingredients

  • 4 Halibut 4 oz each
  • 2 small zucchini thinly sliced
  • 1/2 red onion thinly sliced
  • 1 colored pepper use any color, or mix colors
  • 1 TBS fresh dill 1/2 TBS dried
  • 2 TBS fresh parsley 1 TBS dried
  • 1 lemon thinly sliced
  • Salt & Pepper
  • olive oil
  • heavy duty tin foil 16x12 sheet for each packet

Instructions

  • Preheat outdoor grill to medium heat or oven to 400 degrees.
  • Prepare 4 sheets of tin foil 16x12 each.
  • Season each halibut filet on all sides with salt & pepper, set aside.
  • Spray center of each foil packet with cooking spray.
  • Divide sliced onions, peppers, and zucchini between packets and place on each foil. Season with salt & pepper.
  • Season lightly with salt & pepper.
  • Place one halibut filet on top of veggies.
  • Sprinkle each filet with your fresh or dried herbs.
  • Place 2-3 slices of lemon slices on top of each filet.
  • Drizzle with approx. 1 tsp of olive oil.
  • Bring both long sides of foil together at top and roll 3 times down toward filet and seal tightly. Flatten the short side and roll twice toward fish. Do this for both sides.
  • Place packets directly on grill or baking sheet in oven.
  • Grill approx. 10-14 minutes until veggies are tender and fish is barely cooked through.
  • Remove from grill or oven and carefully open packets to allow steam to excape.
  • Serve & Enjoy!
