I’m always inspired to make stuffed peppers when my summer garden takes off and I can actually pick peppers. Yay. I love to create many ways to make the stuffing. This stuffing reminds me of pizza as it’s cooking.
Italian Sausage Stuffed Peppers
Ingredients
- 4-5 large bell peppers, any color
- 1 lb italian sausage
- 1/2 cup Onion Diced
- 1 TBS garlic minced
- 1 10oz can diced tomatoes I used rotel to add some heat.
- 2 tsp italian seasoning
- 1 cup Cooked Rice I used white rice
- salt & pepper to taste
- 1 cup Shredded Cheese I used mexican cheese blend
- fresh parsley
- 1/2 cup grated parmesan cheese
Instructions
- Cut tops of peppers and remove seeds and membranes. I like to place in boiling salted water to soften up the peppers. (otherwise they will remain crisp through the cooking process.)
- In a skillet heat up 1 TBS oil. Add onion and cook for 1 minutes. Add sausage and cook until browned. Add garlic and cook for 1 minutes.
- Stir in tomatoes, seasonings and simmer for 5 minutes. During this time, add in cooked rice and parmesan cheese. Season more to taste if needed.
- Place peppers into a buttered baking dish. Scoop mixture into peppers. Place a sprinkle of the shredded cheese on top.
- Place in oven and bake for 20 minutes. Add more cheese on top and broil for a few minute until cheese is lightly browned.
