Mexican Meatloaf
They will come to the table for this amazing aroma of delicious mexican flavors found in this moist meatloaf. Hope you enjoy.
Equipment
- 1 deep sheet pan or 2 meatloaf pans
- 1 large mixing bowl
Ingredients
- 2 lbs ground beef
- 1 1/2 cups crushed corn tortilla chips
- 1/2 medium yellow onion, diced
- 1 (10oz) can rotel tomatoes
- 4 oz canned corn, drained
- 1 pkt taco seasoning or 3 TBS homemade taco seasoning
- 2 large eggs
- 1 1/2 cups shredded cheddar or mexican flavored cheese (DIVIDED)
- cilantro or parsley, for garnish
Instructions
- In large mixing bowl combine ground beef, tortilla chips, eggs, rotel tomatoes, onion, corn, taco seasoning and 1 cup shredded cheese.
- Form meatloaf between 2 meatloaf pans or free form meatloaf onto a prepared sheet pan (covered with foil or parchment and lightly sprayed with non-stick cooking spray.)
- Place into 350 degree preheated oven for 1 hour. Place remaining 1/2 cup of cheese on top of meatloaf and bake an additional 10-15 minutes until cheese has melted and is golden brown. Make sure meatloaf is cooked through to temperature of 165 degrees or is no longer pink.
- Garnish with fresh cilantro or parsley Let rest 5-10 minutes and enjoy with favorite taco toppings.
You have talked about your “Homemade Taco Seasoning” in several videos but I haven’t been able to find it. Not found in a search and not in the meatloaf recipe. Thank you.
