Mini Cherry Marbled Cheesecakes

Mini Cherry Marbled Cheesecakes

Ingredients

  • 18 oreos, regular size
  • 1 20 oz can lucky leaf cherry pie filling
  • 2 (8 oz) pkgs cream cheese, softened
  • 1/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350 degrees.
  • Line muffin tins with paper liners.
  • Place one oreo cookie into the bottom of each liner.
  • Beat together cream cheese, sugar, eggs, and vanilla until light and fluffy.
  • Fold in 1/2 can of cherry pie filling until you get a marbled look
  • Place 2 TBS of mixture on top of cookie and smooth out.
  • Bake for 20-25 minutes until cheesecake is done.
  • Cool completely. Peel of paper liner carefully.
  • Top each cheesecake with remainder cherry pie filling. About 2 cherries per cheesecake.
  • Store in refrigerator. Enjoy.
