No Bake Lemon Eclair Cake

Equipment

  • 9 x 13 baking dish
  • large mixing bowl
  • whisk or electric hand mixer
  • spatula

Ingredients

  • 1 (14oz) box original graham crackers
  • 2 (3.4oz) boxes instant lemon pudding mix
  • 3 1/2 cups cold milk
  • 1 (8oz) container cool whip, thawed
  • 1 (16oz) tub lemon frosting
  • lemon slices for garnish

Instructions

  • Spray a 9" x 13" baking dish with non-stick cooking spray.
  • Line prepared baking dish with one layer of graham crackers. Break a few up to fit into smaller spaces.
  • In a large mixing bowl whisk pudding and milk together for 2 minutes until its smooth with a pudding like consistency.
  • Using a spatula fold in cool whip. Layer 1/2 of the pudding mixture over the graham cracker layer in baking dish evenly.
  • Add another layer of graham crackers onto the pudding layer. Pour remainder pudding mixture on top of the graham crackers evenly. Top with final layer of graham crackers.
  • Remove top & foil lining of the frosting tub and microwave frosting for 30 seconds. Stir with a knife.
  • Pour heated frosting over the top layer of graham crackers. Do not spread frosting as it will form pretty quickly.
  • Cover & chill for 12 hours or over night to set up. Garnish with lemon slices.
    NOTE: cover & refrigerate leftover cake.
