

No Bake Lemon Eclair Cake
The Easiest No Bake Recipe with only 5 Ingredients.
Equipment
- 9 x 13 baking dish
- large mixing bowl
- whisk or electric hand mixer
- spatula
Ingredients
- 1 (14oz) box original graham crackers
- 2 (3.4oz) boxes instant lemon pudding mix
- 3 1/2 cups cold milk
- 1 (8oz) container cool whip, thawed
- 1 (16oz) tub lemon frosting
- lemon slices for garnish
Instructions
- Spray a 9" x 13" baking dish with non-stick cooking spray.
- Line prepared baking dish with one layer of graham crackers. Break a few up to fit into smaller spaces.
- In a large mixing bowl whisk pudding and milk together for 2 minutes until its smooth with a pudding like consistency.
- Using a spatula fold in cool whip. Layer 1/2 of the pudding mixture over the graham cracker layer in baking dish evenly.
- Add another layer of graham crackers onto the pudding layer. Pour remainder pudding mixture on top of the graham crackers evenly. Top with final layer of graham crackers.
- Remove top & foil lining of the frosting tub and microwave frosting for 30 seconds. Stir with a knife.
- Pour heated frosting over the top layer of graham crackers. Do not spread frosting as it will form pretty quickly.
- Cover & chill for 12 hours or over night to set up. Garnish with lemon slices.NOTE: cover & refrigerate leftover cake.
