Olive Garden Copycat Zuppa Toscana Soup

I love this soup.  With a nice chunk of Italian bread to dunk in the broth.  OH Boy.  The kale, sausage, garlic, creamy broth, and red pepper flakes for a kick, you can’t go wrong with this one. Very comforting.

Olive Garden Copycat Zuppa Toscana Soup

Ingredients

  • 1 lb ground sausage
  • 3 cloves garlic minced
  • 6 cups kale cleaned and chopped
  • 1 medium Onion diced
  • 6 russet potatoes cleaned, halved and sliced.
  • 2 cartons chicken broth 64 oz total
  • 1 TBS Flour
  • 1d cup Heavy Cream
  • Salt & Pepper to taste
  • red pepper flakes to taste

Instructions

  • Brown ground sausage in a large pot. Add onions and cook for 2 minutes. Add garlic and cook for additional minute.
  • Sprinkle flour over mixture and stir to combine.
  • Pour chicken broth in and stir. Bring to a boil.
  • Mean while, clean potatoes and cut lengthwise in half. Slice into 1/4 pieces.
  • Once soup is boiling add potatoes and cook for 20 minutes until potatoes are fork tender.
  • Reduce heat to low. Add seasonings to taste.
  • Stir in heavy cream & kale.
  • Cook an additional 5 minutes, stirring occasionally.
  • Serve and Enjoy.
