Welcome back everyone. Today, I'm going
0:02
to show you how to make a vanilla sauce
0:05
bread pudding.
0:08
Now,
0:09
Father's Day is coming up and that's
0:11
what Thomas wants. He requested either a
0:15
custard pie or a bread pudding. I chose
0:18
the bread pudding. It's got the bread in
0:21
it. It absorbs that liquidy custardy
0:24
eggy filling and then you top the whole
0:27
thing off with a delicious vanilla
0:30
sauce. All right, all you need is the
0:32
bread, some pantry ingredients to pull
0:35
this whole thing together. Let's talk
0:38
about the bread.
0:40
I'm using a French loaf. I just picked
0:43
this up from my local Walmart. It was in
0:45
their fresh bakery section there. Look
0:48
at that. It looks really delicious.
0:50
And it's very fresh.
0:52
Which means it's squishy and we don't
0:54
really want that for the bread pudding.
0:57
We want to make sure that the bread is
0:59
dried out. Now, you can use lots of
1:02
different versions of bread. You can use
1:04
white bread, you can use the French
1:06
bread, you can use brioche, whatever you
1:09
got, okay? You just want to make sure
1:11
it's kind of a white loaf. I'm going to
1:13
cut these into cubes because it is very
1:15
fresh and then we're going to dry these
1:17
out in the oven just so that they can
1:20
absorb the liquid and not be kind of
1:22
gummy in your
1:24
dessert. All right, you guys, let's go
1:26
ahead. You're going to want about 5 to 6
1:28
cups of cubed bread.
1:32
And I'm just going to start at one end
1:33
work my way down to the other. I've got
1:35
a measuring cup out here so I can make
1:37
sure that I have exactly 5 to 6 cups so
1:40
we don't have too much. Cuz whatever we
1:43
have left we can use for anything else
1:45
that you want. So, we're just going to
1:47
start down here. We're going to use it.
1:50
Don't take off the edges to your bread.
1:55
This is where you're going to want
1:58
all of that right there.
2:01
You're going to want 1-in pieces.
2:05
That'll give it a nice texture
2:08
to the bread pudding.
2:11
Now, I'm just going to stack them on top
2:12
of each other.
2:15
Cut through.
2:17
Don't squish too much, okay?
2:23
And then we'll just cut through, making
2:24
our little cubes.
2:30
There we go.
2:32
Look at that.
2:34
Now, when you measure it out, just put
2:37
it into your measuring cup.
2:42
I'm going to give it a good squish a
2:43
little bit.
2:45
>> [snorts]
2:47
>> All right, that's four cups right there,
2:48
and then I'm going to cut up just a few
2:50
more pieces of that to get about half of
2:52
this to get the other two cups to make
2:54
my six cups of the dice cubes.
2:57
Now, I've taken a large sheet pan, and I
3:00
just put a piece of parchment on it, and
3:03
we'll take the cubed bread and we'll
3:04
place it on there.
3:06
We want to air these out. We'll move
3:08
these around till we get a single layer,
3:11
and then we'll add the other ones, and
3:13
then I'm going to show you what we're
3:13
going to do. Now, I've got my oven
3:15
preheated at 250°,
3:19
and we're going to dry these out for
3:21
about 30 to 45 minutes.
3:25
That will really help
3:28
in getting these to absorb that custard
3:30
mixture that we're going to make. So,
3:32
make sure you do that. We've got a
3:34
single layer of our bread cubes here.
3:36
I'll be back in 30 to 45 minutes and
3:38
show you the next step.
3:40
You know what it's going to be. We're
3:42
going to make that custard, and then
3:44
we've got to make a delicious vanilla
3:46
sauce to top it all off with. All right,
3:49
I've taken the bread out of the oven
3:51
about 10 minutes early, because they're
3:53
pretty dried out, nice and crunchy.
3:57
Just cooling these down for just a
3:58
minute. Now, in my baking dish, which is
4:00
about a 9 by 13, I'm just taking a
4:04
pastry brush, 1 Tbsp of butter, and I'm
4:06
just going to make sure that gets all
4:08
over the baking dish. Make sure you coat
4:10
it well.
4:12
All right, now what we're going to do is
4:13
take our dried out bread cubes, and
4:15
we're going to place them into the
4:16
casserole dish.
4:26
I'm going to be in a medium skillet, to
4:28
make our custard, I am going to place
4:31
1/4 cup of butter into our medium
4:33
saucepan, and we're going to put it over
4:36
medium heat.
4:40
And then to that, we're going to add in
4:41
2 cups of milk.
4:47
We're going to let this come to a
4:49
simmer. We want that that butter to
4:51
melt, and mix in with the milk.
4:54
You want it nice and simmered.
4:56
Takes about 4 to 5 minutes to get to
4:59
that stage.
5:00
And once it's been about 4 to 5 minutes,
5:03
and your butter has melted into the
5:04
milk, and we have a nice simmer along
5:06
the edges of the milk here, we're going
5:09
to turn off the burner, and then we're
5:11
going to pour this all over the bread.
5:17
Yep, we're going to saturate the bread,
5:19
get it nice and wet
5:21
in the liquid here.
5:23
We're going to let it sit for about 5
5:26
minutes, till we make the other part of
5:28
the custard base. I'm going to push the
5:31
bread into the liquid.
5:34
All right, let's make the other part.
5:35
While the bread is soaking, we're going
5:37
to make that second part of the custard.
5:39
I've got two eggs that I've beaten in
5:41
just a small bowl, and we're going to
5:43
add that to kind of a medium bowl here,
5:45
and then we're going to make everything
5:47
right in here.
5:54
There we go. This is a different way to
5:57
make bread pudding.
5:59
It's got different layers to it. We're
6:01
going to add in half a cup of white
6:03
granulated sugar.
6:06
Now, if you want to make this more rich,
6:09
you can put in a half a cup of brown
6:11
sugar instead of the white sugar.
6:14
And then, we've got to give it some
6:16
vanilla flavor right there. 1 Tbsp.
6:21
Yeah, fill it up.
6:26
And then, we're going to shake in some
6:29
ground cinnamon.
6:31
Oh, Thomas is going to love that.
6:35
Half a teaspoon to a teaspoon, whatever
6:37
you like.
6:38
And then, we're going to put in a little
6:40
pinch of some ground nutmeg.
6:45
Ooh, that smells good.
6:48
All right, I'm going to take my fork
6:49
back to where I did the eggs.
6:51
Then, we'll just mix this together.
6:55
And then, what I like to do before it's
6:57
all said and done,
7:00
pinch of salt.
7:04
I'm doing this separate because we
7:05
didn't want to put in the hot milk and
7:07
butter. It'll scramble your eggs.
7:11
All right.
7:13
Let's bring over our bread.
7:16
Nice and soaked.
7:19
What we're going to do is pour this over
7:20
it.
7:27
Get all of it out of there. It's all
7:29
goodness.
7:32
Now, what we're going to do is move this
7:33
stuff around.
7:36
Stir it up.
7:38
There we go.
7:41
Back down into a single layer.
7:44
I don't like to smash it down,
7:47
but kind of pick it up a little bit,
7:49
give it some texture.
7:51
That's it, you guys.
7:53
Except for that vanilla sauce we're
7:54
going to make when this is all said and
7:56
done.
7:57
I've got my oven preheated at 350°.
8:00
We're going to bake this for about 45
8:03
minutes to an hour. You want it be nice
8:05
and crispy on the edges, and you want
8:09
your bread pudding to absorb the liquid
8:12
and be nice and plump and have a good
8:14
texture to it. You can take a toothpick
8:16
and insert it and just make sure it's
8:18
not wet too much on the inside of your
8:21
bread pudding bread cubes there. All
8:24
right. And then, once it comes out of
8:26
the oven, we're just going to cool it
8:28
down for 10 minutes, and then in that
8:29
process of the 10 minutes, we are going
8:32
to make that a vanilla
8:34
sauce. That vanilla sauce
8:37
to pour over this bread pudding.
8:40
All right, you guys. I'll be back. All
8:42
right, I've just pulled this out of the
8:44
oven. Look at how beautiful that looks.
8:47
The bread puffed up with all that
8:49
liquid. It's nice and firm in the
8:51
center, nice and golden or brown across
8:54
the top. We're going to let this rest
8:56
for about 10 minutes, and in the
8:58
meantime, while it is resting, we are
9:01
going to make that delicious vanilla
9:04
sauce
9:05
that'll take it to another level.
9:07
Now, to make the sauce, we're going to
9:09
just be in a medium saucepan. We're
9:10
going to add in the ingredients, and
9:12
then we're going to just bring it to a
9:13
boil until it thickens, and then that's
9:15
going to be the sauce. Now, the first
9:17
thing that we're going to add is one
9:18
stick of butter.
9:21
I just cubed it, make it easier to melt
9:24
into our sauce there.
9:26
Now, I'm not going to turn on the burner
9:28
until I get everything into my pot here.
9:30
And then, we're going to add in 1/2 cup
9:33
of brown sugar, packed.
9:39
And then, we're going to add in half a
9:40
cup white granulated sugar.
9:46
And then we're going to add in half a
9:47
cup
9:48
heavy whipping cream
9:50
help thicken things up.
9:55
Pinch of salt.
9:58
We're going to turn this on a medium
9:59
heat
10:01
and then we're going to stir this
10:04
every so often
10:06
till it's all combined, the butter has
10:08
melted and this will take about 4 to 7
10:11
minutes
10:12
to get this going.
10:14
Now, you should reach a full boil
10:18
and then it should start thickening up.
10:20
And once you get to that, you're going
10:22
to turn off the burner.
10:25
Now, this is a vanilla sauce, so we are
10:27
going to take and stir in 1 Tbsp
10:32
of a vanilla extract.
10:40
And we'll stir it in. It's going to
10:42
smell very fragrant, rich with that
10:46
aroma from the vanilla in there.
10:50
I'm going to grab a spoon here. Look at
10:51
that sauce. Oh.
10:55
That's what we're looking for right
10:57
there.
11:00
It's a glossy.
11:04
The sugars have melted in there.
11:08
Right there.
11:10
Let's give that a taste.
11:12
Mhm. Oh my goodness.
11:15
We're going to pour this over the bread
11:16
pudding
11:17
right now.
11:21
It's going to soak on in.
11:26
Take a fork and I'm just going to kind
11:28
of poke holes throughout just to kind of
11:32
pull that sauce in.
11:35
The best time to eat this is right now.
11:44
Mhm, it smells so decadent.
11:49
Look at that.
11:57
Vanilla sauce
11:59
bread pudding.
12:02
All right, you guys. I got Thomas in the
12:03
kitchen to take the first bite of his
12:06
vanilla sauce bread pudding for Father's
12:10
Day.
12:11
Look at that bite. I doubled it up.
12:14
Two layers of that.
12:16
Here he is.
12:17
>> Yeah.
12:19
You're at it, go.
12:23
>> He smelled this all morning.
12:28
>> [sighs]
12:32
>> That is awesome.
12:36
>> All right, you guys. What do y'all
12:38
think?
12:40
>> I can taste like holiday in there.
12:43
>> That's the nutmeg and cinnamon. I know,
12:45
when I opened up the oven door, it
12:47
smelled like the holidays, too. I was
12:48
like, "Oh my gosh."
12:51
But it smells so good.
12:54
>> That sauce is amazing.
12:57
>> Yeah.
12:58
I got to get my piece here.
13:01
So we can enjoy this.
13:03
And I will see y'all on the next
13:04
episode. And don't forget to give me a
13:06
thumbs up. Like this video. Share the
13:09
video. Don't forget to hype it, if you
13:11
have that opportunity, too.
13:13
We'll see y'all on the next episode.
13:15
Happy Father's Day
13:17
to everyone out there celebrating. We'll
13:19
see y'all on the next episode. Bye.
13:23
>> Bye.
