0:00
hello everyone and welcome back today
0:02
I'm going to show you how to make
0:06
meatballs it's the same flavors that you
0:09
love in a Mississippi pot roast but
0:11
without that cost pot roast and chuck
0:14
roast are pretty expensive right now
0:17
ground beef is too a little bit but it's
0:20
way cheaper and you can get a lot more
0:22
out of this one here we're going to bulk
0:23
it up okay we got the same flavors we're
0:26
going to have almost the same technique
0:28
we're going to form the meatballs after
0:30
we put some stuff into them we're going
0:31
to give them a nice sear like you do a
0:34
roast lock in some flavors give it a
0:37
nice color nice crispiness around that
0:39
meatball we're going to make the gravy
0:42
for it that it's going to simmer in and
0:45
it's just a few ingredients for that
0:47
y'all know if you know what a
0:48
Mississippi pot roast is without losing
0:50
any flavor without losing any time here
0:54
we go first thing we're going to do is
0:56
chop up a yellow onion it adds nice
0:59
flavor it bulks up the ground beef a
1:03
bit we're not sautéing down the onion
1:05
we're just going to mince it very finely
1:09
I just took off the two ends of the
1:10
onion and the outer layer I'm going to
1:13
cut it in half we're just going to
1:15
follow the lines of the onion and make
1:20
slices I love Swedish meatballs I've
1:23
never tried this one here so I'm really
1:25
excited it's going to be very delicious
1:30
I may to save half of this onion and
1:34
in yep that's what I'm going to do all
1:36
right we'll save that for another
1:39
dish all right so I'm using half of a
1:41
yellow onion I turn my onion sideways
1:45
and I'm just going to run my knife
1:47
through make small dices make sure you
1:54
fingers you want these to melt into the
1:56
meatballs not have big chunks cuz then
1:59
it's it's hard to form the meatball and
2:01
they might fall apart on
2:05
you this is the only thing that we're
2:09
up I'm going to add that to the ground
2:11
beef that's in my large bowl right here
2:14
if I didn't tell you this is one
2:19
pound I'm just using the front edge of
2:22
the knife here that way I don't dull the
2:27
it by scraping all my cutting
2:32
board we're going to crack in one
2:37
egg use a bowl here make sure there's no
2:42
in we're going to add in 1/4 cup of
2:47
milk we're going to add in half a cup of
2:51
breadcrumbs or panco crumbs I have a
2:54
quarter cup of regular breadcrumbs in
2:56
here and then I have a quarter cup of
2:58
the Italian breadcrumbs I'm going to go
3:00
in with a/4 teaspoon or half a teaspoon
3:03
of salt we're going to add in about 1/4
3:06
teaspoon of black pepper to half a
3:09
teaspoon flavor it up I'm going to shake
3:13
in some garlic powder about A4 to a half
3:16
a teaspoon right across the
3:20
top I'm going to add in wer
3:25
sauce right across the top about A4 of a
3:28
teaspoon I I always get asked why my
3:31
wishes bottle looks like this with the
3:32
top ripped off of the paper I don't know
3:36
my mom did this when I was young and
3:38
that's how I remember it so I always
3:39
just take off the top right there and
3:41
leave all the paper on there all right
3:43
I'm going to put some gloves on mix this
3:47
up I have a lot of different varieties
3:50
of Meatballs on my recipe blog
3:54
plates.com so you can go check that out
3:57
meatballs and go see what you can do
4:01
with one pound of ground beef how you
4:04
can bulk it up make it different
4:07
flavors make your family happy at meal
4:15
time okay we got this all mixed up what
4:19
do take off my gloves and then we're
4:22
going to form our meatballs just going
4:25
to take a sheet of parchment here put it
4:30
I'm going to go in scrape it along the
4:34
bowl that way they form All
4:37
Uniform just going to place it in my
4:39
hand should have left my gloves on huh
4:43
all right nice perfect little meatball
4:45
I'll put them right on there make sure
4:47
you roll them really good nice and tight
4:50
that way they don't fall apart when we
4:56
them okay it made 28 meatball out of
5:00
that batch that's a lot that's like four
5:02
meatballs for seven people or seven
5:07
people you can even freeze this recipe
5:10
what we're going to do now is get our
5:12
large Skillet out we're going to add
5:14
some butter and some oil to it we're
5:15
going to bring it to a little simmer and
5:17
then we're going to start frying up the
5:19
meatballs I'm going to place my burner
5:23
heat I'm going to add 2 tablespoons of
5:26
butter get that nice and melting then
5:29
we're going to drizzle in 1 tbsp of
5:31
cooking oil avocado oil olive oil
5:34
whatever you got all right we're going
5:36
to get that hot I'm going to be doing my
5:38
meatballs in batches and then they'll
5:40
all go into the same pan once we make
5:44
gravy so just take a look at it we want
5:46
it simmering little bitty bubbles all
5:49
over that way it can really start
5:51
crisping up the meatballs y'll see the
5:53
sizzle right there perfect we'll start
5:55
putting in the meatballs to get nice and
5:57
crispy and then we'll rotate them around
6:07
all right we got them all in there I
6:08
don't have to do them in batches which
6:10
is good we're going to let these sit
6:11
till they get nice and golden brown on
6:12
one side and then we'll start flipping
6:14
them should take about three to 4
6:16
minutes okay I'm going to start rotating
6:17
them around I want yall to
6:19
see look at that that's what you want
6:23
we're going to cook them on the other
6:25
side few minutes just like you do a
6:30
them I just take a spoon spoon them
6:33
around 3 minutes all right I'm just
6:35
going to rotate them around just a
6:36
little bit for 1 minute then we're going
6:38
to remove them out of the
6:40
pan don't move them around too much you
6:42
don't want to break them up you want
6:43
them to keep their nice meatball shape
6:47
there yeah that looks good let's remove
6:53
aside I'm going to set my pan off to the
6:56
side for just a second let it cool down
6:58
for a second while we open open up one
7:00
can of beef broth it's 14.5 o
7:04
size right what I'm going to do is take
7:06
this grease out of the
7:12
okay we're going to add butter you know
7:14
that's the component to Mississippi pot
7:18
roast so we're definitely going to get
7:20
some going in there melt that that's one
7:23
of the flavor profiles while that's
7:26
melting let's go ahead and add the beef
7:31
we're going to want to bring that to a
7:34
component one packet of ranch seasoning
7:38
salad dressing and recipe mix this is 1
7:41
oz now I do have a recipe for it on my
7:47
recipe blog Katherine plates.com but I'm
7:49
showing you all the packets that we're
7:50
going to be using I'm just going to
7:53
sprinkle that in I'll take this out
7:57
we're going to add in one packet
7:59
of brown gravy this is 87 o size or you
8:07
aou now I also have a recipe for brown
8:12
mix but I'm showing youall a really
8:14
simple recipe here we're going to
8:17
in let's get that all back on the burner
8:19
there we're still on a medium high
8:27
peppercinis now I'm going to add in a
8:31
juice and what you want to do is add a
8:34
little juice give it a taste add a
8:36
little more juice okay because this can
8:38
make a really hot dish and you don't
8:41
that all right that's good right there
8:46
whisk silicone whisk I'm going to blend
8:51
together we're going to give it a
8:54
taste if you want any more heat level in
8:56
here you can add the peppercinis
8:58
themselves you can chop pop them up and
9:01
what we're looking at right here that's
9:03
the pepperi right here I'm probably
9:05
going to add a few just to give it a
9:08
look did I say a look a look there we go
9:11
okay perfect now I'm going to continue
9:14
whisking break up any
9:16
lumps all right I'm going to grab a
9:21
try see where we're at with our
9:24
flavors oh that's good all right m m mhm
9:31
good now you can cool down the spiciness
9:35
of the dish by adding some sour cream to
9:38
it and we'll see how that is at the end
9:40
but that's good right here if you want
9:42
more heat you can add more
9:45
juice you can add more pepperchinis in
9:48
there all right we're bringing that to a
9:51
boil and what we're going to do start
9:55
adding our meatballs in
10:07
go all right now what I'm going to do is
10:10
just toss the meatballs into the sauce
10:13
so they're nice and coated with the
10:19
mixture let's bring that to a boil one
10:23
time we're going to turn down our heat
10:25
to a low setting we're going to place
10:28
the lid on we're going to cook this for
10:32
minutes check your liquid level every
10:35
now and then if you need to add a little
10:36
extra beef broth or some water that way
10:39
your meatballs don't dry out in there
10:41
okay it just depends on your lid and
10:43
your pot just keep an eye on it every so
10:46
often there's my Mississippi meatballs
10:55
fork give them a try
11:04
look how tender those
11:19
yeah they're nice and tender smooth
11:23
happening meatball here oh I love the
11:32
M those are delicious Thomas had already
11:35
tried one and he said they are delicious
11:38
too all right you guys let me know what
11:41
