Welcome back everyone. Katherine's
0:02
Plates. It's simple, easy, and delicious
0:04
in my kitchen. Today we're going to make
0:07
a classic chicken Alla King. What a
0:11
great dish. You can serve this over
0:13
rice, potatoes, toast, which is classic,
0:17
and also biscuits, which we're going to
0:20
do. I've got my chicken already boiling
0:22
on the back, and I'll show you really
0:24
quick right here how I did that. We're
0:27
going to want that going and we can get
0:29
everything else ready and then add the
0:31
chicken that's already cooked to it at
0:33
the end. I'm using some chicken breast.
0:36
You want about 1 and 12 to 2 lbs.
0:39
Boneless, skinless. I'm going to place
0:41
these into a medium saucepan.
0:46
These are pretty thin.
0:49
They'll cook faster.
0:54
Now, you can broil your chicken, boil
0:57
your chicken, you can also bake your
0:59
chicken if you want to do that,
1:02
whichever is your preferred method. Now,
1:04
what we're going to do is pour in some
1:07
chicken broth to cover the chicken.
1:13
So, I'm guessing this is going to be
1:14
about 1 and 1/2 cups. I'm going to bring
1:18
this to a boil over high heat, and we're
1:20
going to let it simmer. It'll take about
1:22
15 minutes to cook your chicken. And in
1:25
the meantime, I'm going to go ahead and
1:26
just start seasoning it up with some
1:29
garlic powder. Got to flavor it up. Some
1:33
onion powder.
1:36
And then we've got some black pepper
1:41
and some salt.
1:47
While we got the chicken cooking, we're
1:49
going to go ahead and start with
1:50
everything else and pull this whole
1:51
thing together. I'm going to be using a
1:54
green bell pepper and a yellow onion.
1:57
And we're just going to prepare those.
2:01
Now, chicken ala king. It's got a lot of
2:04
good stuff in it. It's creamy. It's got
2:07
veggies in it. It's got the chicken in
2:09
it, but it's got a lot of flavor to it.
2:11
Packs a punch. And it's not that hard to
2:14
make.
2:15
I've passed this recipe on to my kids.
2:19
I'm sure they're gonna call me.
2:21
>> Too bad.
2:22
>> Hopefully they don't, though. Now, we're
2:24
going to dice up the onion and the bell
2:26
pepper. Here's the onion. Now, I've just
2:29
taken the ends off of the onion and
2:31
peeled off that outer layer. Cut the
2:34
onion in half. I'm just running my knife
2:36
through large pieces here.
2:40
And then just turn it and run your knife
2:42
through.
2:44
We got some pretty big dices here
2:46
because we want some texture to the
2:48
dish. Now with the bell pepper, I'm just
2:52
going to cut off the sides
2:56
and then we'll get off all the little
2:58
pieces there. We'll chop this up the
3:00
same way. We're just going to run our
3:02
knife through and run it through like
3:04
that. I'll finish the rest. All right,
3:07
let's cook these up. Now, you can change
3:10
up the colors of the bell peppers if you
3:11
want to add different colors to your
3:14
chicken alla king and that would look
3:15
really nice. But I got some red ones
3:17
going in later. It is hot here in
3:20
southeast Texas.
3:22
I'm like, wow. You can feel it in the
3:24
house, too.
3:27
But we still have to eat.
3:30
So, I'm going to put a little bit of
3:31
olive oil into my skillet. And we're
3:34
going to heat that up on a mediumigh
3:35
heat. about a tablespoon or so.
3:41
I want to get that nice and hot before I
3:43
add in the onions and peppers. That way,
3:45
they get a nice sear on them while
3:47
they're cooking and give them a good
3:48
color, too. And all we want to do is
3:51
soften them down. That way, we can
3:54
finish up the dish.
4:00
Ah, I love that sear sound.
4:09
We're going to cook this for a few
4:11
minutes until the peppers and onions are
4:12
nice and soft, have a nice color to
4:15
them. What I'm going to do right now is
4:17
go ahead and season them. Some salt,
4:21
black pepper,
4:23
garlic powder,
4:26
onion powder.
4:29
Oh, it smells delicious in there.
4:35
There's a lot of multitasking going on
4:36
in here. That way, everything can come
4:39
together at the same time. While your
4:41
chicken is cooking and you're doing your
4:43
peppers and onions, this is a great time
4:46
if you're making biscuits to go ahead
4:47
and get your biscuits going or cook your
4:50
rice or your potatoes and have those
4:53
going so it all comes together at the
4:56
same time. So, I'm going to go ahead and
4:57
get my biscuits going so they're done.
4:59
This is a small little pack of biscuits
5:01
cuz it's just me being Thomas. I'm going
5:04
to pop these in the oven and get these
5:06
going.
5:08
Peppers and the onions just about done.
5:10
What I'm going to do is add few
5:13
teaspoons of minced garlic. One and two.
5:19
We're going to mix this around
5:22
for just a minute.
5:25
we can wake up that flavor of the garlic
5:27
and get it all into those peppers and
5:28
onions. I'm going to add in another
5:31
tablespoon of some olive oil or you can
5:33
put in some butter for some flavor,
5:35
which I think I'm going to add another
5:37
tablespoon of butter.
5:39
You know, chicken Alla King, we're going
5:42
to be putting some flour in here. So,
5:45
you need some moisture in there from the
5:46
oil and the butter.
5:49
So, we're going to sprinkle in 1/3 cup
5:53
of flour. We're going to stir that in
5:56
till it's all coated to the onions and
5:59
the peppers.
6:00
You want to cook the flour out anyway to
6:02
get that rawness out of it.
6:06
Cook that for about 1 minute to 2
6:09
minutes.
6:11
Now, what we're going to do, add in two
6:13
cups of chicken broth
6:17
very slowly.
6:19
All right. Once we get that all
6:20
combined, we're going to add in one cup
6:22
of heavy whipping cream.
6:26
I'm just pulling it up toward the sides
6:28
to make sure that all the flour has been
6:30
incorporated.
6:34
Now, we're going to thicken the gravy
6:36
here for the alla king.
6:40
It'll take about five minutes. And while
6:42
that's happening, my chicken is done.
6:45
So, I've taken it off the burner and I'm
6:46
going to pull it out, place it on a
6:48
cutting board, and we're going to give
6:49
it a good chop.
6:51
We're going to add in one cup of frozen
6:53
peas and carrots.
6:58
To give it some more color, I'm going to
7:00
be adding in some roasted red bell
7:02
peppers. They come in a jar. So, I'm
7:03
just going to take a few out and then
7:05
I'm just going to chop them up.
7:12
All right. Then we're going to add all
7:14
the chicken.
7:20
Let's mix it all together.
7:25
I've got my heat still on because I want
7:27
to heat through the vegetables
7:30
and the chicken
7:32
and get that sauce all into it. There
7:35
you go. There's my chicken Alla King.
7:38
Doesn't that look delicious? Does that
7:40
look classic to y'all?
7:43
What do y'all think? I put the biscuits
7:46
on. Give it a nice picture there. We're
7:48
going to scoop this up. Going to put it
7:50
in a bowl. I'm going to give it a try
7:51
for you. Look at the colors, you guys.
7:57
Here's my bite.
8:00
Let's give that a try.
8:11
I love the creaminess of that sauce when
8:14
you got all those colors in there.
8:17
That's a dish to make in the summertime.
8:20
Makes it nice and pretty, doesn't it?
8:25
Mhm.
8:29
Now, I was going to pour the stuff over
8:31
the biscuits, but
8:34
I'm just going to do it like this.
8:41
Oh, that's good.
8:45
All right, you guys. Give me a thumbs up
8:46
on this chicken Alla King recipe. Tell
8:49
me how you do yours differently. All
8:51
right, you guys. I'll see y'all on the
8:53
next episode. Don't forget to hype,
8:54
like, share, all that good stuff. I'll
8:57
see y'all on the next episode. Bye. I'm
9:00
going in for those veggies.
