Nothing like using fresh handpicked peaches from a peach orchard. Thanks Shirley for bringing us these delightful fragrant peaches.
Peach Cobbler
Ingredients
- 8 fresh peaches peeled, pitted and sliced.
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 tsp cinnamon
- 1 tsp lemon juice
- 2 tsp corn starch
- 6 TBS unsalted butter chilled & cut into small pieces
- 1 cup All Purpose Flour
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp Salt
- 1/4 cup boiling water
Instructions
- Preheat oven to 425 degrees.
- Mix together 3 TBS sugar, & 1 tsp cinnamon for later use.
- In large bowl, combine peaches, white sugar, brown sugar, cinnamon, lemon juice, and cornstarch.
- Mix to coat evenly. Pour into a 2 quart baking dish. Bake 10 minutes.
- Meanwhile, in a large bowl, combine flour, sugars, baking powder & salt.
- Blend in butter with pastry blender or using your finger tips. Looking for a course blend. Stir in water until combined.
- Remove peaches from oven. Place spoonfuls of topping over peaches.
- Sprinkle sugar and cinnamon mixture over mixture.
- Bake for 30 minutes until golden brown in color.
- Serve with ice cream & enjoy.
