Peach Cobbler

Nothing like using fresh handpicked peaches from a peach orchard. Thanks Shirley for bringing us these delightful fragrant peaches.

Peach Cobbler

Ingredients

  • 8 fresh peaches peeled, pitted and sliced.
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 6 TBS unsalted butter chilled & cut into small pieces
  • 1 cup All Purpose Flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp Salt
  • 1/4 cup boiling water

Instructions

  • Preheat oven to 425 degrees.
  • Mix together 3 TBS sugar, & 1 tsp cinnamon for later use.
  • In large bowl, combine peaches, white sugar, brown sugar, cinnamon, lemon juice, and cornstarch.
  • Mix to coat evenly. Pour into a 2 quart baking dish. Bake 10 minutes.
  • Meanwhile, in a large bowl, combine flour, sugars, baking powder & salt.
  • Blend in butter with pastry blender or using your finger tips. Looking for a course blend. Stir in water until combined.
  • Remove peaches from oven. Place spoonfuls of topping over peaches.
  • Sprinkle sugar and cinnamon mixture over mixture.
  • Bake for 30 minutes until golden brown in color.
  • Serve with ice cream & enjoy.
