- 9" x 5" x 3" loaf pan
- pastry brush
Ingredients
- 1/2 cup white granulated sugar
- 1/2 cup light brown sugar, packed
- 1/2 cup light corn syrup
- 3 TBS melted butter, slightly cooled
- 3 large eggs, beaten
- 2 tsp vanilla extract
- 1 TBS all-purpose flour
- 1 pinch salt
- 1 1/2 cups chopped pecans
- 1 sheet puff pastry
- 1 water
- 1 large egg
- 1 tsp granulated sugar
Instructions
- Preheat oven to 375 degrees. Make sure one rack is on the bottom wrung and one rack is on the top wrung in oven. Spray a 9" x 5" x 3" loaf pan with non-stick cooking spray. Set aside.
- In a large bowl whisk together 1/2 cup granulated sugar & 1/2 cup brown sugar to combine. Whisk in corn syrup, 3 TBS melted butter & 2 beaten eggs until smooth. Whisk in flour and salt until slightly thickened.
- Fold in pecans. Set aside.
- Lightly flour a clean work surface and lay out puff pastry. Slightly roll out with a rolling pin. Cut the pastry into 3 strip sections following the folded lines.
- Place one strip into the bottom of the prepared loaf pan. Pour half of the pecan mixture on top of the strip of puff pastry in bottom of loaf pan. Cover mixture in pan with another strip of puff pastry to cover. Pour remaining mixture on top and spread evenly.
- Cut the 3rd strip of puff pastry into 16 equal short strips to create a lattice on top. NOTE: You can watch my video above to review my directions on a lattice.
- Beat together 1 tsp water & 1 egg in a small dish. Brush on to the puff pastry lattice.
- Place the cobbler into the 375 degree preheated oven on the bottom rack and bake for 15 minutes. Lower oven temperature to 350 degrees and bake an additional 12-15 minutes until cobbler is no longer jiggly in middle.
- Place cobbler on top rack in oven and raise temperature to 400-425 degrees and continue baking for a few minutes until lattice is golden brown and cooked through.
- Let sit for 30 minutes or so and serve with a scoop of ice cream, if desired.
