Pecan Pie Cookies

All the taste of a pecan pie in a cookie using pie crust.  Nothing missing in these cookies.  My husband was so excited to try these, he loves pecan pie.

Pecan Pie Cookies

Ingredients

  • 2 Prepared Pie Crust Refrigerated
  • 2/3 cup brown sugar
  • 4 eggs beaten
  • 4 TBS butter melted
  • 1/2 cup corn syrup
  • 1/4 tsp salt
  • 1 cup pecan pieces

Instructions

  • Preheat oven to 400 degrees.
  • In a medium sauce pan, mix together brown sugar, eggs, butter, corn syrup, salt, and pecans.
  • Turn heat on to medium and stir continually until mixture thickens resembling pudding. Turn off heat and let rest.
  • Lightly flour work surface. Lay out your pie crust. Use a rolling pin and roll out pie crust to thin it out.
  • Using a glass or cookie cutter around 3 inches in diameter, cut out circles from pie crust and place on a parchment lined baking pan.
  • Crimp edges around 1/8 inches all around circles to hold in the filling.
  • Place 1 TBS of filling into center of circles and spread evenly.
  • Place cookies into oven for 8-12 minutes until lightly browned and firm.
  • Cool on a rack completely.
  • Enjoy.
