Ingredients

  • 1 lb steam ums
  • 2 cups diced bell peppers any color
  • 1 onion, diced
  • 2 TBS butter
  • 1 TBS cooking oil
  • 8 oz cream cheese, softened
  • 1/2 cup mayonaise
  • 16 oz provolone cheese shredded
  • 1 loaf baguette, sliced

Instructions

  • Preheat oven to 350 degrees.
  • In a large skillet, heat butter and oil on a medium high. Add diced peppers and onions and sautee for 2 minutes until softened and lightly browned.
  • In a large bowl place cream cheese, mayonaise, and 8 oz of the provolone cheese in it. Add the sautéed peppers and onions. Mix well.
  • In the same large skillet on medium high, start cooking the steak ums. Once browned on one side, flip over, season with salt and pepper and brown. Remove from pan onto a cutting board. Brown the rest of the steak ums. Chop the steak ums on the cutting board into bite size pieces. Add to the bowl with cheese and vegetables. Mix well.
  • Pour into a casserole dish (9x13). Sprinkle the other 8 oz of provolone cheese on top.
  • Bake in oven for 20-25 minutes. Then set oven to BROIL and cook another 5 minutes or so until nice and golden brown on top.
  • Place baguette slices onto a baking sheet, drizzle with olive oil and bake for 6 minutes on each side along with the casserole.
