Pineapple Coleslaw

Cool refreshing coleslaw using pineapple and a delicious dressing with Hawaiian flavor.

Equipment

  • large mixing bowl
  • cutting board
  • large sharp knife
  • box grater
  • small bowl & whisk

Ingredients

  • 3 cups thinly shredded cabbage (green and/or purple)
  • 1 large carrot, grated thin
  • 3 green onions, thinly sliced
  • 1 (20oz) can pineapple chunks, drained well (reserve juice for dressing)

Creamy Dressing

  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 3 TBS apple cider vinegar
  • 3 TBS brown sugar
  • 3 TBS reserved pineapple juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • In a large mixing bowl mix together shredded cabbage, shredded carrot, sliced green onions, and drained pineapple.
  • In a small bowl whisk together mayonnaise, sour cream, apple cider vinegar, brown sugar, pineapple juice, salt & pepper.
  • Pour dressing into cabbage mixture and mix together. Chill in refrigerator covered until ready to serve.
