Pistachio Fudge
The perfect fudge for St. Patrick's Day or Easter with it's wonderful green color. Plus if you love pistachios you will love this. It's only 6 ingredients and so easy to put together.
Equipment
- medium mixing bowl, safe for the microwave
Ingredients
- 3/4 cup white bakers chips
- 1/3 cup water
- 6 TBS butter
- 1 (3.4oz) package of pistachio flavored instant pudding dry mix
- 3 cups powdered sugar
- 1/2 cup salted, roasted pistachios
Instructions
- In microwave safe medium mixing bowl, place white bakers chips, water, and butter. Place in microwave for 1 minute. Remove and stir until chips and butter have melted with the water and is smooth.
- Add in pistachio pudding dry mix into the chips and butter mixture until dissolved.
- Slowly stir in powdered sugar 1 cup at a time until all 3 cups are incorporated and you have a smooth consistency. Fold in pistashio nuts.
- Prepare an 8 x 8 baking dish with parchment or foil. If using foil, spray it with non-stick cooking spray.
- Place mixture into baking dish and spread evenly and firmly. Sprinkle additional pistachios on top and lightly tap them into the top of the fudge.
- Refrigerate for at least 2 hours until solid. Remove from baking dish and cut into pieces. Enjoy.
