Cheesy Ground Beef & Rice Casserole

Ingredients

  • 1 TBS cooking oil
  • 1 1/2 lbs Ground Beef
  • 1 (1oz) pkg ranch seasoning dry
  • 1 cup bell peppers, any color, diced
  • 1 Onion Diced
  • 2 cups Chicken Broth
  • 2 cups shredded cheese, cheddar or other favorite
  • 1 tsp garlic minced
  • salt & pepper to taste
  • 2 cups long grain uncooked rice

Instructions

  • Preheat oven to 350 degrees.
  • In a large skillet, saute up onions and peppers until softened. Add salt & pepper to taste. Add ground beef and brown. Drain grease.
  • Add minced garlic and cook for 30 seconds. Add in ranch seasoning packet. and mix well.
  • Stir in rice, broth, and 1 cup of shredded cheese. Simmer 3 minutes.
  • Transfer to 9x13 baking dish. Cook for 15 minutes.
  • Remove from oven and top with remainder cheese.
  • Place back in oven for 10 minutes to finish cooking rice and melting cheese.
  • Enjoy.
