When we travel we usually stop at a Cracker Barrel restaurant for a break. They are known home cooking dishes. One of favorites is always their meatloaf. I’ve been searching high and low for the recipe. I was super surprised what most recipes call for. Ritz crackers and lots of cheddar cheese with an array of seasonings floored me. But let me tell you, my family gave this 2 thumbs up. The delicious glaze for the top of this meatloaf didn’t surprise me too much as I’ve used it before on my regular meatloaves. Yum!!
Meatloaf Cracker Barrel Recipe
Ingredients
- 1 1/2 - 2 lbs ground beef 80/20
- 3 eggs slightly beaten
- 1 - 1 1/2 cups Ritz crackers crushed
- 1 sm yellow onion diced small
- 1/2 green pepper diced small
- 3 cups shredded cheddar cheese
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp garlic powder
- 2 TBS parsley flakes
- 1/2 cup milk
- 1 TBS Worcestershire sauce
- 1/2 tsp salt
- 1/8 tsp pepper
Topping
- 1/2 cup brown sugar
- 1/2 cup ketchup
- 1 tsp yellow mustard
Instructions
- Preheat oven to 350 degrees.
- Add ground beef to a large bowl and break up into large pieces.
- Add the rest of the meatloaf ingredients from the Meatloaf list to the ground beef and mix well.
- Place mixture into the center of a baking dish or baking pan (with a lip) covered with parchment paper or lightly sprayed with a cooking spray.
- Form mixture into a loaf shape.
- Bake in preheated oven for 30 minutes.
- In the meantime, in a small bowl add all the topping ingredients and mix to combine.
- Pull meatloaf out of the oven and spread the topping evenly over the top of meatloaf.
- Place back in oven for additional 20-30 minutes until internal temperature of 160 degrees.
- Remove from oven and allow to sit on pan for 5-10 minutes before slicing. Enjoy.
