Red, White, & Blue Banana Pudding Salad

Equipment

  • 2 large mixing bowls
  • electric hand mixer
  • serving bowl
  • spatulas
  • cutting board & sharp knife

Ingredients

  • 2 (8oz boxes) cream cheese, softened
  • 1 (3.4oz box) instant banana cream pudding dry mix
  • 1 cup refrigerated liquid French Vanilla Creamer
  • 16 oz fresh strawberries, remove stems & cut into quarters
  • 12 oz fresh blueberries
  • 4 medium bananas, sliced
  • 1/4 cup lemon juice

Instructions

  • In a large mixing bowl beat softened cream cheese until smooth using an electric hand mixer.
    NOTE: to soften cream cheese, place in a microwave safe bowl and microwave for 10 seconds. NOTE: cream cheese may clump in beaters, but just keep mixing, it will smooth out.
  • Empty package of pudding mix into cream cheese and beat until combined.
  • Slowly add a little bit of creamer to mix and beat to combine. Keep adding in a little of cream and continue to mix until all of the creamer has been mixed in.
    NOTE: you can substitute 1 cup heavy whipping cream & 1 tsp of vanilla extract for the French Vanilla Creamer.
  • Refrigerate mixture until done with next steps.
  • In another large mixing bowl place sliced bananas and lemon juice. Stir to coat evenly. Pour out excess lemon juice. Add in prepared strawberries and blueberries. Mix to combine.
  • Remove cream cheese mixture from refrigerator and pour over fruit. Fold together until combined.
  • Serve immediately, or cover & refrigerate until ready to serve.
