Christmas Rice Krispies Snowballs

Equipment

  • Large Pot or Dutch Oven
  • spatula
  • measuring cups
  • 1 1/2 inch cookie scoop
  • large baking sheet pan
  • parchment paper
  • microwave safe bowl
  • 2 toothpicks

Ingredients

  • 6 cups Rice Krispies cereal
  • 1 (10oz) bag mini marshmallows
  • 5 TBS butter
  • 1/2 cup smooth peanut butter
  • 1 (24oz) block white vanilla bark or white chocolate chips
  • blue sprinkles or sanding sugar
  • 1 bag minis Reese's Peanut Butter Cups unwrapped

Instructions

  • In a large pot or Dutch oven melt 5 TBS butter. Mix in peanut butter and marshmallows until smooth. Turn off heat and remove from burner.
  • Stir in Rice Krispies until well coated. Let sit for 5-10 minutes until easy to manage.
  • Using a 1 1/2 inch cookie scoop place a mound of rice krispie mixture into the palm of your clean hand and flatten out into a disk shape.
  • Place 1 mini Reese's peanut butter cup in the center of the disk and form the disk around the peanut butter cup and roll into a round circle.
  • Place it on a parchment lined sheet pan. Continue with the rest of the snowballs.
  • Melt bark or white chips per instructions on back of package for microwave instructions.
  • Poke a toothpick through the snowball and swirl it through the melted bark until coated. Tap lightly on side of bowl to get excess off. Place covered snowballs back onto sheet pan.
  • Sprinkle blue sanding sugar or sprinkles on the snowballs before they set up.
  • Let sit on countertop or in refrigerator to set up. Enjoy.
