Rustic Pecan Pie in a Crock Pot

Around my house you don’t need a holiday for pecan pie.  What an awesome way to make this awesome pie.  In a crock pot.  It was delicious.  My husband, Thomas is a huge fan of pecan pie.  He said it was better in the crock pot vs. in the oven.  What a great compliment.

My tricks to make this work

The trick is too make sure you spray the bottom and sides of the crock pot with a cooking spray.  i used a coconut oil spray.  Also

When placing your refrigerated pie dough in the bottom of pot, pinch any holes together.  Make sure when you pour the mixture on top of the pie crust, it doesn’t go over the sides.

Cool down completely to be able to slide it out along the long side of the crock pot. I used a knife along the edges to pry loose any that was stuck.

Rustic Pecan Pie in a Crock Pot

Ingredients

  • 1 Pie Crust Refrigerated
  • 3 eggs
  • 1 Cup sugar
  • 2/3 Cup Dark Corn Syrup
  • 1/3 Cup butter melted
  • 1/8 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 1/2 Cup pecans chopped
  • Vanilla Ice Cream For Serving

Instructions

  • Spray the inside of the crock pot.
  • Mold the pie crust inside the crock pot.
  • Stir all Ingredients, except pecans.
  • Now add pecans and stir again.
  • Pour the filling into the pie crust.
  • Cover the crock pot with lid.
  • Cook on High for 2 1/2 - 3 Hours.
  • Serve and Enjoy!
