Smoked Sausage & Creamy Pesto Pasta
One Pot Easy Weeknight Meal
Equipment
- Large Pot or Dutch Oven
Ingredients
- 2 TBS cooking oil
- 1 TBS butter
- 1 lb smoked sausage or Kiel Basa cut into 1/4 inch rounds
- 1 medium yellow onion, diced
- 2 tsp minced garlic
- 1/4 tsp black pepper
- 3 cups chicken broth
- 1 (12oz) pkg uncooked egg noodles
- 1/2 cup parmesan cheese
- 1 cup basil pesto (or other favorite flavor or brand)
- 1 cup heavy whipping cream
Instructions
- In large pot or Dutch Oven over medium high heat add oil & butter. Heat until butter is melted. Add in diced onion and sliced sausage. Cook until onion is softened and sausage is browned on both sides.
- Stir in garlic and black pepper and cook an additional minute.
- Add in chicken broth and bring to a boil over high heat. Add in noodles. Stir to combine noodles, sausage and broth. (NOTE: noodles do not need to be completely submerged in liquid.)
- Place lid on pot, lower heat to a medium high or medium for 10 -12 minutes until pasta is cooked through and tender. (NOTE: please remove lid every few minutes and stir pasta so it doesn't stick to bottom of pot.) (IF YOU NEED TO ADD ANY ADDITIONAL BROTH, DO SO AT THIS TIME.)
- Remove lid once pasta is completely cooked. Stir in parmesan cheese, pesto, and heavy cream to combine. Turn off burner and let sit for a few minutes to thicken if needed. Enjoy.
