

Savory Roasted Sweet Potatoes
The perfect side for Thanksgiving.
Equipment
- vegetable peeler or paring knife
- cutting board & large sharp knife
- large mixing bowl
- measuring spoons
- small microwave safe bowl
- large sheet pan lined with parchment
- measuring cup
- cheese grater
Ingredients
- 2.5-3 lbs fresh sweet potatoes or yams
- 4 TBS butter, melted
- 3 tsp minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried sage
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 2 tsp dried parsley
- 1 cup freshly grated parmesan cheese
Instructions
- Melt butter in a small microwave bowl. Whisk in minced garlic, salt, pepper, sage, thyme, rosemary, and parsley.
- Peel & cut sweet potatoes into 1/2 inch rounds. Place the sweet potato rounds into a large mixing bowl.
- Pour melted butter mixture over the sweet potatoes in the large mixing bowl and coat potatoes well with mixture.
- Pour grated parmesan cheese onto parchment lined sheet pan and spread out evenly.
- Place sweet potato rounds flat onto the parmesan cheese.
- Bake in 400 degree preheated oven for 25-30 minutes until potatoes are soft and tender.
- Remove from oven and separate potatoes and serve on a serving platter.
