Skillet Fried Potatoes

Equipment

  • cast iron or large deep skillet

Ingredients

  • 5-7 medium gold potatoes ( you can also use reds or russets) diced into 1/8 – 1/4 inch thick pieces
  • 1-2 medium yellow onions diced
  • 2 TBS cooking oil (our favorite is avocado oil)
  • 1 TBS butter
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 1/2 tsp paprika
  • 1 tsp dried rosemary
  • 1 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • extra oil & butter if needed

Instructions

  • Heat a large deep sided skillet or a cast iron skillet to a medium heat. Add cooking oil & butter and allow to come to a sizzle.
  • Add in diced potatoes and onions.
  • In a small bowl whisk together all seasonings. Pour seasoning mix over potatoes and onions. Stir potatoes, onions, seasoning mix into butter and oil until well coated.
  • Place a lid onto skillet and cook for 10 minutes. (Remove lid every few minutes and give the potatoes a mix. This will keep potatoes from sticking to bottom of skillet.)
  • After the 10 minutes, remove lid. Stir potatoes. Add additional 1 TBS butter and 1 TBS oil if needed. With lid off cook an additional 10 minutes or more until potatoes are to your doneness. Stir every few minutes.
