Crockpot Creamy Italian Chicken & Pasta

Cooking it all in the Crockpot. No other dishes to make this scrumptious pasta dish.

Equipment

  • 6 quart crockpot

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 2 tsp minced garlic
  • 8 oz cream cheese (onion & chive flavor) cubed
  • 4 cups chicken broth
  • 1 TBS dry Italian seasoning
  • 1 TBS dry parsley
  • 12 oz uncooked dry pasta (egg noodles, elbow, lasagna noodles, etc.)
  • 8 oz mozzarella cheese, shredded

Instructions

  • Spray with non-stick cooking spray bottom of 6 quart crockpot
  • Place chicken in bottom of crockpot. Season with salt & pepper.
  • Place cubed cream cheese all over the chicken. Sprinkle Italian seasoning and parsley on top of cream cheese.
    (NOTE: If you are not using the "Chive & Onion" flavor cream cheese, you can add chopped onion or onion powder for that flavor.)
  • Pour chicken broth all over the chicken, cream cheese, and seasonings. Place lid on crockpot. Cook on high 3-4 hours or 5-6 hours on low until chicken is cooked through and fork tender and can shred easily.
  • Shred chicken in the crockpot. Place crockpot on High heat and stir in dry uncooked pasta. Place lid back on and cook anywhere from 15-30 minutes until pasta is cooked and tender.
    (NOTE: Cooking time will depend on the size of your uncooked pasta.)
  • Stir in mozzarella cheese until melted and creamy.
    (NOTE: if you need to thicken more, add corn starch slurry. (2 TBS corn starch and 1/4 cup water whisked together.)
    (NOTE: if too thick, add more chicken broth to thin out sauce.)
  • (NOTE: if you want to add broccoli or other vegetable, add once pasta goes into crockpot.)
