Stuffed Big Mac Meatloaf & Special Sauce

A McDonald's Big Mac copycat recipe in a meatloaf form. So delicious. Make the special sauce to dunk your oven ready fries in to eat with this amazing meatloaf that tastes exactly like the real Big Mac.

Equipment

  • 9" x 5" x 3" loaf pan
  • non-stick cooking spray
  • large mixing bowl
  • cutting board & sharp knife
  • measuring cups & spoons
  • 10 x 18 piece parchment paper
  • cheese grater
  • small mixing bowl
  • small wire whisk or fork

Ingredients

Meatloaf mixture

  • 1 lb ground beef
  • 1/2 cup panko or bread crumbs
  • 1/3 cup ketchup
  • 2 large eggs
  • 1 TBS dried parsley
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 slices dill pickles
  • 6 oz shredded cheddar cheese
  • 2-3 TBS dried minced onion

Special Sauce

  • 1/2 cup mayonnaise
  • 2 TBS diced dill pickles
  • 1 TBS dried minced onion
  • 1 TBS ketchup
  • 1 tsp granulated sugar

Instructions

  • Preheat oven to 350 degrees. Lightly spray a 9"x5"x3" loaf pan.
  • In a large mixing bowl, mix together ground beef, panko crumbs, ketchup, eggs, parsley, onion powder, salt & pepper.
  • Place mixture into the center of of a 18"x10" piece of parchment and flatten out into a rectangular shape evenly.
  • Place pickles in a line in the middle of the meatloaf mixture. Top with shredded cheddar cheese and dried onion.
  • Bring both long sides of parchment paper up to the top sealing the meatloaf over the toppings (pickles, cheese, and onion). Seal the sides as well.
  • Pick up the meatloaf by the parchment paper and place the whole thing into the prepared loaf pan. Pull parchment paper allowing meatloaf to roll seam side down in loaf pan.
  • Bake in preheated oven for 1 hour to 1 hour & 15 minutes until internal temperature of at least 160 degrees in center of meatloaf. Remove from oven and allow to rest for 15 minutes before slicing and serving with special sauce.
    NOTE: serve up with oven french fries. Bake them while meatloaf is resting.

Special Sauce

  • While meatloaf is cooking make the special sauce.
  • In a small bowl whisk together the Special Sauce ingredients (mayonnaise, diced dill pickles, dried minced onion, ketchup, and sugar). Place in refrigerator to chill to serve with meatloaf & fries. Enjoy.
