- 1 medium onion, diced
- 2 tsp minced garlic
- 1 pkg taco seasoning or 3 TBS homemade taco seasoning
- 12 oz uncooked large elbow pasta
- 3 cups chicken broth
- 1 (4oz) can diced green chilies

- 2 cups cheddar cheese, shredded
- salt & pepper to taste (optional)
Instructions
- In a large pot or skillet over medium high heat break up ground beef and cook until no longer pink. (Drain if needed.) Add in diced bell peppers and onion. Cook until peppers and onions are soft. Add in garlic and cook 30 seconds while stirring.
- Stir in taco seasoning, green chilies, diced tomatoes and chicken broth. Season with salt & pepper if needed. Over high heat bring mixture to a boil. Stir in pasta.
- Lower heat to a low setting, place lid on and cook for 12-15 minutes until pasta is cooked through and tender. NOTE: Stir twice during cooking time to make sure pasta isn't sticking to the bottom of pot and also you can check the liquid level. Add more broth or water if needed. (You don't want it too soupy.)
- When pasta is done, remove lid and turn off burner. Stir in shredded cheese. Garnish with your favorite taco toppings if desired. Enjoy.

This was such a delicious dish and so easy to make. My grandchildren asked for seconds, and they are very picky eaters – so Thank You Catherine for such a great dish you shared.

Awesome! so happy y’all enjoyed and found it easy to make.
I’m going to make this tomorrow, looks yummy. Would it change the taste much if I used water instead of chicken broth? Do you have a recipe for boxed carrot cake that you can add crushed pineapple /or raisins to? I thought if any one would have it, it’d be you.
Using water won’t affect the flavor that much at all and I hope you enjoyed this recipe. I don’t have a carrot cake recipe yet, but been working one up and trying to work it in the schedule.
Thanks for watching!
