This is a simple, easy, and delicious soup. I use no beans in it, but you can definitely add them if you like. The flavors are out of this world using ranch, rotel tomatoes and my homemade taco seasoning. I fill with a lot of frozen corn.
Taco Soup
Ingredients
- 1 LB Ground Beef
- 1 Onion Diced
- 1 can rotel tomatoes
- 1 packet Ranch dressing mix
- 1 packet taco seasoning or 3 TBS homemade seasoning
- 2 cups frozen or canned corn
- 4 cups Beef Broth
- 1 cup Water
- Sour Cream
- Shredded Cheese
- Cilantro
- pico
- bked tortilla strips
Instructions
- Heat a drizzle of olive oil in a large pot. Add onions and sautee for 2 minutes.
- Add ground beef and brown.
- Into ground beef add can rotel tomatoes, packet ranch dressing mix, taco seasoning, corn, beef broth, and water. Mix well.
- Bring to a rapid boil. Turn down to low and let simmer for 20 minutes.
- Prepare toppings.
- Serve and Enjoy!
