Taco Soup

This is a simple, easy, and delicious soup.  I use no beans in it, but you can definitely add them if you like.  The flavors are out of this world using ranch, rotel tomatoes and my homemade taco seasoning.  I fill with a lot of frozen corn.

Taco Soup

Ingredients

  • 1 LB Ground Beef
  • 1 Onion Diced
  • 1 can rotel tomatoes
  • 1 packet Ranch dressing mix
  • 1 packet taco seasoning or 3 TBS homemade seasoning
  • 2 cups frozen or canned corn
  • 4 cups Beef Broth
  • 1 cup Water
  • Sour Cream
  • Shredded Cheese
  • Cilantro
  • pico
  • bked tortilla strips

Instructions

  • Heat a drizzle of olive oil in a large pot. Add onions and sautee for 2 minutes.
  • Add ground beef and brown.
  • Into ground beef add can rotel tomatoes, packet ranch dressing mix, taco seasoning, corn, beef broth, and water. Mix well.
  • Bring to a rapid boil. Turn down to low and let simmer for 20 minutes.
  • Prepare toppings.
  • Serve and Enjoy!
