

Tex-Mex Fritos Pie Casserole
Equipment

- 9 x 13 baking dish
- cutting board & sharp knife
Ingredients
- 1 1/2 – 2 lbs ground beef
- 1 medium yellow onion, diced
- 2 packets taco seasoning or 6 TBS homemade taco seasoning
- salt, to taste
- black pepper, to taste
- 1 (14oz) can whole kernel corn with liquid
- 1 (14oz) can diced tomatoes with juice
- 1 (4oz) can diced green chilis mild
- 1/4 cup favorite red salsa
- 3/4 cup sour cream
- 1 (9oz) bag Fritos original corn chips (DIVIDED)
- 2 cups mexican shredded cheese (DIVIDED)
- 3 green onions, sliced
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
- In a large skillet over medium high heat, break up and brown ground beef. Add onion in to soften. Drain excess grease. Stir in taco seasoning and season with salt & pepper to taste.
- Mix in corn, diced tomatoes, green chilis, salsa, and sour cream. Turn off heat.
- Pour 1/2 of the meat mixture into the prepared baking dish evenly. Spread 1/2 of a bag of Fritos corn chips. Top evenly with 1/2 of the shredded cheese.
- Repeat with remainder of meat mixture, then Fritos corn chips and top with shredded cheese.
- Bake in preheated oven for 15-20 minutes until cheese has melted. Garnish with sliced green onions. Enjoy.
