The Ultimate Roast Beef Po’Boy

It's Easy to make in crockpot, messy to eat with a drippy gravy (the best part), & so fall a-part tender. Wrapped in french bread. Don't forget to dress it up.

Equipment

  • cutting board & sharp knife
  • paring knife
  • large deep skillet
  • tongs

  • 6 quart crockpot/slow cooker
  • bread knife

Ingredients

  • 2.5 – 3 lb chuck roast or other type of roast
  • 6 peeled cloves garlic, cut into halves lengthwise
  • salt, black pepper, garlic powder, onion powder
  • 2 TBS cooking oil
  • 2 bay leaves
  • 3 cups beef broth
  • 2 medium yellow onions, cut into half slices
  • 1 TBS Worcestershire sauce
  • 1/2 tsp dried ground thyme

Po'Boy Fixings

  • french bread, lettuce, tomatoes, provolone cheese, mayonnaise, pickles, banana peppers

Instructions

  • Pierce a small hole into roast roast 8 times on the front with a paring knife. Peel and cut garlic cloves into halves lengthwise. Insert each half of garlic into each hole in the top of roast. Turn roast over and do that side with the garlic.
  • Season the top of roast with a sprinkling of salt, black pepper, garlic powder, and onion powder.
  • Heat 2 TBS cooking oil in a large deep skillet over medium high heat. Place roast into hot skillet seasoning side down. Season top of roast with a sprinkling of salt, black pepper, garlic powder, and onion powder. Sear roast for 3-4 minutes until golden brown.
  • Turn roast over and cook an additional 3-4 minutes until golden brown. Rotate the sides of roast around to sear. Remove roast from skillet and place into a 6 quart crockpot.
  • Peel 2 medium yellow onions and cut onions in half. Slice onions. Cut slices in half. Place sliced halves of onion in crockpot with roast.
  • Pour beef broth in crockpot on top of roast and onions. Place bay leaves, dried thyme and Worcestershire sauce on top of roast. Sprinkle salt, black pepper, garlic powder, and onion powder on top. Stir.
  • Place lid on crockpot. Cook on high for 5 1/2 – 6 hours or on low for 8 – 10 hours.
    NOTE: time will depend on size and type of roast. Make sure roast is very tender and can be shredded with 2 forks easily.
  • Remove bay leaves from crockpot and toss away. Remove tender cooked roast to a cutting board & shred with 2 forks. Remove any fatty pieces you may not want. Place shredded roast back into crockpot.
  • Cut 6" french bread lengthwise 3/4 of the way through. Coat the inside with mayonnaise. Place 2 slices of provolone cheese, a mound of shredded roast, tomatoes, lettuce, onion, banana peppers or other toppings. Close sandwich and enjoy.
