Turkey Meatloaf

This turkey meatloaf is stuffed full of yummy sauted vegetables and seasonings. So delicious and amazing.

Turkey Meatloaf

Ingredients

  • 1 1/2 cups diced vegetables I used 2 carrots, 1 squash, 1 zucchini, 1 onion
  • 2 cups fresh spinach
  • 1 lb ground turkey
  • 1 egg beaten
  • 1 TBS cooking oil
  • 1 TBS minced garlic
  • 1/4 cup panko crumbs or bread crumbs
  • 1/2 tsp paprika
  • 1/4 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper

Topping

  • 2 TBS ketchup
  • 1/4 tsp mustard
  • 1 TBS brown sugar

Instructions

  • Heat up 1 TBS cooking oil in frying pan. Add diced vegetables and season with a little salt, pepper and paprika for flavoring. Saute for 5 minutes. Turn burner off and add spinach and season with a little salt and cook using residual heat from vegetables and pan to wilt spinach.
  • Preheat oven to 350 degrees. Spray a loaf pan with cooking spray.
  • In a medium bowl mix together ground turkey, egg, garlic, panko crumbs, paprika, oregano, salt, and pepper.
  • Add sauted vegetables and mix well.
  • Place in loaf pan. Bake for 45 minutes.
  • Mix topping ingredients.
  • Remove meatloaf from oven and pour sauce over meatloaf. Place back in oven for 15 minutes.
  • Remove and let sit for a few minutes. Enjoy.
