Upside Down Banana Bread

Let’s take a banana bread recipe and take it up a notch or turn it upside down. I add a delicious caramel layer with sliced bananas, but banana bread batter on top of that, bake it, and flip the whole thing over and what a beautiful presentation it makes. Not to mention, the most delicious flavor you could get from a banana bread. Try it.

Upside Down Banana Bread

Ingredients

  • 3-4 bananas, very ripe
  • 2 bananas, sliced
  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup white granulated sugar
  • 1/2 cup butter
  • 1 tsp vanilla
  • 2 cups all purpose flour
  • 1 cup brown sugar

Instructions

  • Preheat oven to 350 degrees. Lightly spray a 9x9 baking pan with cooking spray.
  • In a large bowl, mash up 3-4 bananas (depending on size. if you have large bananas 3 will work.)
  • Add 3 eggs, oil, white sugar, and vanilla to bananas and mix well.
  • Add 2 cups of flour, stirring after each cup of flour to incorporate well. Set aside.
  • In a medium pot, melt 1/2 cup butter over medium high heat. Add brown sugar and mix together continually until the mixture is boiling rapidly. Turn off heat.
  • Pour butter/brown sugar mixture into prepared baking pan to cover entire bottom of pan.
  • Slice 2 bananas and layer on the bottom of pan. Should have one layer.
  • Puor banana bread mixture that you made earlier over the bananas and spread evenly.
  • Place in preheated oven for 40-50 minutes until golden brown and you can insert a toothpick in and come out clean.
  • Allow to cool for just a few minutes. (Not too long).
  • Place a plate over the banana bread and turn over. Cake should release from pan onto plate. (Give it a shake or pat the bottom of pan to help release if needed.)
  • Enjoy with some cool whip or ice cream.
