White Queso & Chorizo Dip

This appetizer is ready for football parties, tailgating parties, and or anything.  The chorizo adds a deliciousness to the ooey gooey of the cheese. Come with me as I show you how to put a bag of chips to use.

White Queso & Chorizo Dip

Ingredients

  • 1/2 lb chorizo ground
  • 1 onion minced (divided)
  • 1 jalapeno seeded minced (divided)
  • 1/2 tsp ground cumin divided
  • 1/2 tsp salt
  • 1 cup heavy cream
  • 24 oz shredded cheese mix of pepper jack & monterray jack (your pref)
  • 2 TBS flour
  • 2 TBS olive oil divided
  • extras diced tomatoes, sliced green onions, and cilantro

Instructions

  • In a skillet, on medium high heat 1 TBS olive oil. Add 1/2 onion & 1/2 jalapeno and lightly soften. Add ground chorizo and cook until browned. Stir in 1/2 tsp cumin and 1/4 tsp salt to taste. Set aside.
  • In medium sauce pan, on medium high heat on 1 TBS olive oil. add 1/2 onion & 1/2 jalapeno and lightly soften. Sprinkle flour over onion and pepper and cook for 1 minute. Add heavy cream and stir well.
  • Add cheeses, cumin, and salt. Stir slowly until all cheeses are creamy and smooth.
  • Pour queso into serving dish, and top with chorizo. Add tomatoes, cilantro, green onions.
  • Serve with chips and enjoy.
