Broccoli Cheese Casserole
The perfect side dish using broccoli & cheese with a delicious creamy mixture to pull it all together.

- 4-5 cups chopped fresh broccoli
- 1 (10.5oz) can cream of celery soup
- 1 cup mayonnaise
- 2 large eggs, beaten slightly
- 1/4 medium yellow onion, diced fine
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 oz sharp cheddar cheese (DIVIDED)
- 1/2 sleeve Ritz crackers, crushed
- 1/4 cup melted butter
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
Place chopped fresh broccoli in a microwave safe bowl, add 2 TBS water, cover tightly with plastic wrap, and steam for 2 minutes in microwave. Remove and set aside.NOTE: you can steam broccoli for 5 minutes in a sauce pan on stove top for 3-5 minutes until tender. Drain. In a large mixing bowl mix together soup, mayonnaise, eggs, onions, salt & pepper. Stir in 8 oz cheddar cheese. Mix in drained broccoli until well coated.
Pour broccoli mixture into prepared baking dish. Top with remaining 4 oz cheddar cheese.
In a small bowl mix together melted butter and Ritz cracker crumbs and sprinkle on top of broccoli mixture.
Bake in preheated oven for 30 minutes until cheese is melted and topping is golden.
