Broccoli Cheese Casserole

The perfect side dish using broccoli & cheese with a delicious creamy mixture to pull it all together.

Equipment

  • 9 x 13 baking dish
  • medium bowl
  • plastic wrap

Ingredients

  • 4-5 cups chopped fresh broccoli
  • 1 (10.5oz) can cream of celery soup
  • 1 cup mayonnaise
  • 2 large eggs, beaten slightly
  • 1/4 medium yellow onion, diced fine
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 oz sharp cheddar cheese (DIVIDED)
  • 1/2 sleeve Ritz crackers, crushed
  • 1/4 cup melted butter

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
  • Place chopped fresh broccoli in a microwave safe bowl, add 2 TBS water, cover tightly with plastic wrap, and steam for 2 minutes in microwave. Remove and set aside.
    NOTE: you can steam broccoli for 5 minutes in a sauce pan on stove top for 3-5 minutes until tender. Drain.
  • In a large mixing bowl mix together soup, mayonnaise, eggs, onions, salt & pepper. Stir in 8 oz cheddar cheese. Mix in drained broccoli until well coated.
  • Pour broccoli mixture into prepared baking dish. Top with remaining 4 oz cheddar cheese.
  • In a small bowl mix together melted butter and Ritz cracker crumbs and sprinkle on top of broccoli mixture.
  • Bake in preheated oven for 30 minutes until cheese is melted and topping is golden.
