Chuckwagon Ground Beef & Pasta
30 minute skillet meal using ground beef wagon wheel pasta and a delicious hearty sauce that tastes somewhere between a sloppy joe and bbq. It's very easy & simple to make.

- 1 lb ground beef
- 1 medium green bell pepper, diced
- 1 medium yellow onion, diced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 cup uncooked wagon wheel shaped pasta or other small shaped pasta
- 1 1/2 cups beef broth
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/2 cup shredded monterey jack cheese or cheddar
- 3 green onions, sliced
Brown ground beef in a large deep skillet over medium high heat until no longer pink. (NOTE: keep ground beef in big pieces.)
Add in diced onion & bell peppers to ground beef and cook until softened. Drain excess grease. Season with salt, pepper, garlic powder, and onion powder.
Stir in beef broth, brown sugar, and apple cider vinegar. Bring to a boil over high heat. Stir in uncooked pasta. Cover skillet with lid and lower heat to a medium low. Cook for 10-15 minutes until pasta is cooked through and tender.
Turn off heat. Sprinkle shredded cheese on top. Garnish with green onion slices. Place lid back on and allow cheese to melt. Serve with your favorite veggie or side salad.
