Chuckwagon Ground Beef & Pasta

30 minute skillet meal using ground beef wagon wheel pasta and a delicious hearty sauce that tastes somewhere between a sloppy joe and bbq. It's very easy & simple to make.

Equipment

  • large deep skillet with lid
  • cutting board & sharp knife
  • spatula or wooden spoon
  • measuring cups & spoons
  • cheese grater

Ingredients

  • 1 lb ground beef
  • 1 medium green bell pepper, diced
  • 1 medium yellow onion, diced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 cup uncooked wagon wheel shaped pasta or other small shaped pasta
  • 1 1/2 cups beef broth
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/2 cup shredded monterey jack cheese or cheddar
  • 3 green onions, sliced

Instructions

  • Brown ground beef in a large deep skillet over medium high heat until no longer pink. (NOTE: keep ground beef in big pieces.)
  • Add in diced onion & bell peppers to ground beef and cook until softened. Drain excess grease. Season with salt, pepper, garlic powder, and onion powder.
  • Stir in beef broth, brown sugar, and apple cider vinegar. Bring to a boil over high heat. Stir in uncooked pasta. Cover skillet with lid and lower heat to a medium low. Cook for 10-15 minutes until pasta is cooked through and tender.
  • Turn off heat. Sprinkle shredded cheese on top. Garnish with green onion slices. Place lid back on and allow cheese to melt. Serve with your favorite veggie or side salad.
