Chuckwagon Ground Beef & Pasta
30 minute skillet meal using ground beef wagon wheel pasta and a delicious hearty sauce that tastes somewhere between a sloppy joe and bbq. It's very easy & simple to make.
Equipment
- large deep skillet with lid
- cutting board & sharp knife
- spatula or wooden spoon
- measuring cups & spoons
- cheese grater
Ingredients
- 1 lb ground beef
- 1 medium green bell pepper, diced
- 1 medium yellow onion, diced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 cup uncooked wagon wheel shaped pasta or other small shaped pasta
- 1 1/2 cups beef broth
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/2 cup shredded monterey jack cheese or cheddar
- 3 green onions, sliced
Instructions
- Brown ground beef in a large deep skillet over medium high heat until no longer pink. (NOTE: keep ground beef in big pieces.)
- Add in diced onion & bell peppers to ground beef and cook until softened. Drain excess grease. Season with salt, pepper, garlic powder, and onion powder.
- Stir in beef broth, brown sugar, and apple cider vinegar. Bring to a boil over high heat. Stir in uncooked pasta. Cover skillet with lid and lower heat to a medium low. Cook for 10-15 minutes until pasta is cooked through and tender.
- Turn off heat. Sprinkle shredded cheese on top. Garnish with green onion slices. Place lid back on and allow cheese to melt. Serve with your favorite veggie or side salad.
