A Fusion of 2 favorite classics the Cuban Sandwich & the Macaroni Salad. This is so delicous.

Ingredients
8ozelbow macaroni uncooked
1/2TBSsalt
1cupdiced ham (I use the Fricks)
1cupshredded cooked seasoned pork (I use the cooked shredded pork from the store)
1cupshredded or cubed swiss cheese
1/4cupdill relish
1/4red onion, diced small
1/4cupsliced green olives
Dressing
1/2cupmayonnaise
2TBSyellow mustard
1TBSolive oil
2tsplime juice
1tspminced garlic
1/4tspsalt (to taste)
1/4tspblack pepper (to taste)
Instructions
Cook pasta per directions on back of package until done. Drain and run cold water over pasta in the colander until pasta is cooled. Pat pasta dry and place into a large mixing bowl.
Meanwhile whisk in a small bowl the dressing ingredients and refrigerate to chill.
To the large mixing bowl on top of the cooked pasta add the ham, pork, cheese, relish, red onion, and olives. Mix well to combine.
Pour chilled dressing on top and mix again until all ingredients are coated well with the dressing.
NOTE: I use the Smokehouse Fully Cooked Smoked Seasoned Pulled Pork found in the deli section or meat section of the grocery store. You can also make your own pulled pork if you prefer, as long as the pork used is fully cooked & flavored.
