French Onion Beef & Cheese Casserole

- 1 lb ground beef
- 1 medium yellow onion, diced
- 16 oz uncooked penne pasta
- 1 (10.5oz) can cream of celery soup
- 1 (10.5oz) can French Onion soup
- 1 cup French's Fried Onions
- 8 oz mozzarella cheese, shredded
- 1/4-1/2 tsp salt
- 1/4-1/2 tsp black pepper
- 1/4-1/2 tsp garlic powder
- 1/4-1/2 tsp onion powder
- dried parsley (garnish)
Preheat oven to 375 F degrees. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
Bring a large pot of water to a boil and add 1/2 TBS salt. Add pasta and cook until al dente per directions on package. Drain pasta and set aside in same pot.
In a large skillet break up and brown ground beef until no longer pink. Add in diced onion and cook until onions are softened. Drain excess grease from skillet.
Season cooked ground beef with salt, pepper, garlic powder, and onion powder. Stir in both cans of soup and 1/2 of the shredded cheese.
Pour meat mixture into the pot of cooked drained pasta and stir to combine.
Pour meat & pasta mixture into prepared baking dish and smooth evenly.
Top with remaining shredded cheese and top with fried onions.
Bake in preheated oven for 20-25 minutes until cheese is melted and casserole is heated through. Top with parsley.
