Press saute mode on Instant Pot. After heated up add 1 TBS olive oil and brown up meat.
Add onion, garlic, tomato, cilantro, salt and pepper. Stir and make sure all bit are scraped off bottom of pan.
Add olives, olive brine to taste, cumin, bay leaves, tomato sauce. Stir well.
Place lid on Instant pot. Turn on to pressure cooker, high pressure, 15 minutes. Make sure nozzle on top of lid is on the sealed position.
After 15 minutes is done, do a natural release or quick release.
Serve over rice and enjoy.
