Preheat oven to 400 degrees.
Spray each muffin tin cup with cooking spray.
Put 3 tater tots in each muffin tin cup.
Smash tater tots flat in cups using a small plastic measuring cup.
Place in oven for 10 minutes.
At this time, sautee your vegetables until tender.
Cut your cooked breakfast meat into small pieces.
Grate your cheese.
Lower oven to 350 degrees.
Cover tater tots with veggies and meat.
Whisk together 8 eggs in a bowl adding milk, salt, and pepper.
Pour egg mixture over vegetables and meat. Add cheese on top.
Cook for 20 minutes until eggs are cooked through.
Use a spoon to pop out. ENJOY!!
